Our Riverford recipe box experience

I’m not a massive fan of supermarket shopping – I always come home with crap that I don’t need. I’m a big fan of having fresh food delivered to me. So when my local Riverford supplier contacted me to offer me a box I said ‘yes please’.

For the most part I am vegetarian, occasionally I will eat fish and seafood and I have been known to go to the darkside and eat meat on special occasions (like when I was cooked lunch at Lympstone Manor by Michael Caines). I’ve been trying to lure my husband and the children into a vegetarian lifestyle too and I thought the organic vegetarian two meals box might be a good opportunity for a veggie family dinner.

My box was delivered on the day we prearranged, we were in so the driver left it in our safe place. The box contained two veg-centric recipes, fresh organic produce and step-by-step recipe cards. All the veg was lovingly packed and included a cool bag.

Recipe 1: Mushroom and kale lasagne

My hubby’s family is Italian so lasagne is a firm family favourite but this was a lasagne with a difference (no tomato!) I’m not a huge fan of very mushroomy meals and hubby isn’t a fan of kale but I was very keen to give this one a go.

I probably could have left it in the oven for a little bit longer than suggested to brown off but we were STARVING!

The lasagne was lovely, hubby and I enjoyed it, I especially loved the spiced squash and pumpkin seed salad that went with it.

 

Recipe 2: Beetroot and Apple Quinoa with alfalfa and toasted hazelnuts

I made this one with my Mum while she was visiting.

It was very tasty, and took around twenty minutes to prepare. I loved the combo of the soft Wooton Organic soft cheese and toasted hazelnuts.

The dressing of zingy orange zest and ginger mixed with honey and mustard was delicious and really made the salad pop.

 

In conclusion

We loved our recipe box experience, it’s was really good to eat a well thought out meal without actually having to think about it! It’s perfect for busy families and with a different recipe every week, there is always something new to try!
